TOO HOT, NOT HOT ENOUGH (January 11, 2005)

Depending on my supply of hot peppers, which is fickle at all times, my ever-pickling sauce varies in spiciness. Sometimes it is quite hot, and at other times it is rather mild, at least by my own standards. My friends never tire of complaining about the sauce, though. For some it is too hot, and for others it his not hot enough. No surprises here, of course. But there is a sizable group of those who complain both ways. The sauce is never just right. Never satisfied with the sauce\’s spiciness, they are ever in search of some ideal known only to themselves. As I was adding a good dollop of dried hot peppers to the sauce a moment ago, I reflected on all this, as I often do when I am adding something to it. And I quickly concluded that all was well. Indeed, I should start worrying only when my friends stop complaining about my delicious sauce.
