Imagine a dish so hot that fresh chilies are added to it by the handful if one wishes to tone it down. That is the norm I am trying to reach today as I am preparing my sauce, which goes well with pasta and rice, but I have some way to go still. As norms go, this one is pretty solid. And a lasting challenge, too.
